IMG_6192Just want to start by saying that this is not my recipe, it’s from the ToneItUp girls. Now as I stated when I first started these food posts, I can’t really cook, so this is going to be more of “sharing is caring” type of thing. If I try something great, I want to share it with you guys – and obviously if I can make it you can make it! SO yeah, I will put the link to the recipe down at the bottom so you can check it out for yourself! IMG_6177
This is what you’ll need ::
2 cups of oat flour*
8 dates, pitted
1/2 cup of water
1 ripe banana
1/4 cup of maple syrup
1/3 cup coconut oil
3 eggs, lightly beaten
1/2 cup almond milk
1/2 cup chia seeds
3 Tbs unsweetened cacao powder (for color!)
1/2 tsp salt
3 tsp baking powder
1/2 cup of Greek yogurt
it’s actually very easy, you just mix the dry stuff and the wet stuff and then combine the two. The mixture is very wet, so the first time I made these I felt that I had to let it bake for much longer than said in the recipe. BUt I tried letting the mix sit for about an hour and that really helped, the oats and chia seeds drink up alot of the liquid so it’s easier to bake. That’s also something to keep in mind, because of the chia and oats drinking up the liquid, you may notice that after baking them they are still quite wet – I find it best to make them and let them cool in the fridge ovr night and let the seeds to their thing. Then they will be perfect in the morning!
These muffins are perfect in the morning when running out the door or really just anytime during the day when you need a little more energy. I tried adding peanut-butter to them and Oh my god that was delicious! you can also make bread out of this and just slice it down, i’ve tried doing that as well and works well.
